RessaBuilt Recipes: Dishes to Prepare in Your New Home

While our main focus is the design and construction of your home remodel or renovation, the project's final result is truly what the goal is. Check out some recipes we love that you can prepare for yourself or when you have guests over to see the transformation that has occurred!

Carbonara

Ingredients:

  • 1 lb Bucatini
  • .5 lb Guanciale or Pancetta
  • .125 lb Grated Pecorino Cheese
  • .125 lb Grated Parmesan Cheese
  • 4-6 Egg Yolks
  • Fresh Ground Black Pepper
  • Kosher Salt
  1. Cut Guanciale or Pancetta into lardons. In a stainless-steel frying pan over low heat, slowly render the cured meat until crispy. making sure to reserve all the released fat.
  2. Remove the rendered pork from the pan and set aside. Use a paper towel to wipe out any burnt solids that remain in the pan. Do not clean the pan as it will be used later to finish the dish. Add a tbsp of pork fat back to the pan.
  3. Bring a large pot of water to a boil over high heat. Season the water very liberally with salt.
  4. While the water is heating, in a separate bowl, combine the cheese, egg yolks, black pepper, and reserved pork fat. Mix thoroughly to create a “paste.”
  5. Cook the bucatini until al dente. While the pasta is cooking, heat the pan with that fat in it over low heat.
  6. When the pasta is complete, add to the pan and sauté briefly in the fat. Add a small amount of pasta cooking water to the previously made “paste” and combine in order to “temper” the mixture. The reason for this is to raise its temperature to ensure that the eggs don’t scramble when added to the pasta.
  7. Remove the frying pan from the heat and add the cheese “paste.” Toss to combine adding small amounts of pasta water as necessary to create a creamy emulsified sauce.
  8. Season with additional salt and pepper to taste, plate in a pre-warmed bowl, and finish with the crispy pieces of pork and some additional grated parmesan and pecorino cheese.
  9. Serve immediately!
